Summer Cocktails with a View

Summer vacations at Overlook include intense sunrises (and enthusiastic song birds), sunny days on the coast and captivating sunsets on the ocean. Nothing beats a Maine sunset overlooking the water with a great cocktail and good friends! Here are some summer cocktail favorites:

Spiked Lemonade

2 cups lemon-flavored sparkling water or club soda, chilled, 1/2 cup citrus-flavored vodka, chilled, 1/2 cup fresh lemon juice, 1/4 cup sugar, 1/4 cup orange liqueur, Crushed ice, Garnish: lemon slices

Preparation: Combine first 5 ingredients in a large pitcher. Serve over crushed ice. Garnish each serving with a lemon slice, if desired.

The Party Starter

1. Cut melon into chunks and discard rind. Purée chunks in batches in a food processor. Pour mixture through a strainer into a bowl. Pour 4 cups into another bowl; whisk in lemon juice. Save any remaining watermelon juice for another use. Pour juice mixture into 4 ice cube trays* and freeze until firm, at least 3 hours or overnight.

2. Make drinks: Whirl half the watermelon cubes in a food processor until broken up, then add 1 cup tequila and whirl until blended. Pour into a pitcher and repeat with remaining ingredients.

*A standard ice cube tray has 14 cube slots.

Wild Maine Collins

1.5 oz aged rum, 0.75 oz lime juice, 0.75 oz simple syrup, 10 Wild Blueberries  

Shake all ingredients with ice. Fine strain into a Collins glass. Fill with ice. Top with sparkling wine. Garnish with lemon twist and more blueberries.
